Talk Title: New sources of alternative proteins, including underutilised plant proteins, proteins produced by single cell fermentation, and side stream valorisation

Dr. Emma Teuling is project manager protein technology at NIZO (Ede, the Netherlands), and an expert in plant and microbial proteins. Her work field of protein technology ranges from protein extraction and separation from different sources to application in food and feed products. This includes downstream processing, molecular characterization, technical functionality, sensory properties and nutritional quality as well as interaction with other ingredients in complex food matrices.
