Assoc. Prof. Sushil Dhital (Department of Chemical and Biological Engineering, Monash University) is an Editor of Carbohydrate Polymers and Past Chair of the Australasian Grain Science Association. He is internationally recognised for his leading research on starch, dietary fibre, and plant-based proteins, with particular emphasis on processing–structure–function relationships. His work integrates advanced characterisation and innovative processing technologies to advance food structure, nutrition, gut and metabolic health, and sustainable plant-based food systems.
